Q&B Foods Stir-Fry Chicken and Vegetables

Stir-Fry Chicken & Vegetables

Serves 4

Ingredients

14 ounces (yield: 28 ounces) long grain uncooked or precooked rice
1 pound boneless chicken cut into bite size pieces
16 ounces oriental stir-fry vegetable mix
8 ounces Rice Road Teriyaki or Stir-Fry Sauce of your choice
1 ounce vegetable or canola oil black pepper - to taste

Directions

Cook rice according to package directions.
Heat oil in skillet or wok.
Add chicken, season with pepper, and sauté until chicken is cooked through.
Add vegetables and sauce. Mix well and bring to boil for 3-4 minutes. Do not overcook.
Reduce heat. Simmer for additional 1-2 minutes. Remove from heat and serve over rice.
Options: Use beef or shrimp in place of chicken.

Rice Road Salad

Ingredients

4 ounces (yield: 8 ounces) long grain uncooked or precooked rice
2 ounces fresh or frozen mixed vegetables
2 ounces bacon
4 ounces Rice Road Teriyaki Sauce with Sesame & Ginger or Stir-Fry Sauce with Garlic & Ginger
1 tablespoon lemon juice
2 ounces sesame oil
black pepper - to taste

Directions

Cook rice according to package directions.
Thaw frozen vegetables well and set aside.
Fry bacon until crisp and crumble.
Dressing: Whisk sauce and sesame oil and set aside.
Mix all ingredients in a bowl. Season with black pepper. Chill well.
Garnish with lettuce or parsley.

Fajitas Orient

Serves 4

Ingredients

14 ounces (yield: 28 ounces) long grain uncooked or precooked rice
1 pound beef, trimmed and sliced about ¼" thick, cut in wide strips or bite size
1 tablespoon vegetable or canola oil
1 large green bell pepper - cut into ¾" squares
3 ounces red and yellow bell peppers - cut into desired shape and size
8 ounces onion - peeled and sliced thick
3 ounces carrots - peeled, cut in half length- wise and sliced crosswise
3 ounces mushrooms - sliced
8 ounces Rice Road Teriyaki Sauce with Sesame & Ginger
black pepper - to taste

Directions

Cook rice according to package directions
Heat oil in skillet or wok over high heat.
Add beef to skillet and season with black pepper, stirring until beef is cooked medium rare, about 2 minutes.
Add vegetables and sauce.
Stir well for about 3-4 minutes until vegetables are crispy and tender. Do not overcook vegetables.
Reduce heat and simmer 1-2 minutes.
Serve fajita mixture with juices over rice.
Options: Chicken, pork, or seafood may be substituted for beef.

Cashew Chicken Stir-Fry

Serves 4-6

Ingredients

14 ounces (yield: 28 ounces) long grain uncooked or precooked rice
¾ pound boneless chicken breasts - cut into ½" strips
2 tablespoons vegetable or canola oil
1 large green bell pepper - cut into ¾" squares
half of a red bell pepper - cut into 1" slices
1 medium onion - peeled and thinly sliced
¾ cup celery - sliced diagonally into ½" pieces
1/3 cup raisins (optional)
1/3 cup Rice Road Teriyaki Sauce with Sesame & Ginger
¾ cup toasted cashews or almonds
½ teaspoon crushed red pepper

Directions

Cook rice according to package directions.
Heat 1 tablespoon oil in skillet or wok over high heat.
Add chicken strips and stir-fry for 2-3 minutes. Remove chicken from the pan.
Add remaining oil to pan, then peppers, onion, celery, and raisins and stir-fry for 2 minutes.
Return chicken to pan, add sauce, cashews, and pepper flakes.
Reduce heat and simmer for 2 minutes.
Serve over rice.

Serves 4

Ingredients

14 ounces (yield: 28 ounces) long grain uncooked or precooked rice
¾ pound shrimp - uncooked, shelled, and deveined
¾ pound bay scallops - drained and patted dry
1 ounce vegetable or canola oil
8 ounces Rice Road Teriyaki Sauce with Sesame & Ginger
black pepper - to taste

Directions

Cook rice according to package directions.
Heat oil in skillet or wok over high heat
Add shrimp and scallops, season with pepper, and stir-fry for 2-3 minutes.
Pour sauce over seafood mixture and continue cooking for 1-3 more minutes until shrimp is pink and scallops are translucent.
Remove from heat and serve over rice.
Options: Beef, chicken, or pork may be substituted for seafood, however it may be necessary to adjust cooking time accordingly.

Ingredients

1 ¼ pounds beef top sirloin - cut into 20 - 1 ¼" thick cubes
half of a large green bell pepper - cut into 8 squares
1 small onion - cut into 8 wedges
8 ounce bottle Rice Road Teriyaki Sauce with Sesame & Ginger

Directions

Thread each skewer with 5 pieces of beef alternated with 2 pepper squares and 2 onion wedges.
Brush kebabs with teriyaki sauce and baste frequently while grilling or broiling.
Serve with teriyaki sauce on the side for dipping.

Ingredients

1 pound pork loin (chicken may be substituted) - cut into 1" cubes
1 large green or red bell pepper - cut into ½" squares
1 medium onion - peeled, cut in half, and sliced into ½" slices
1 tablespoon vegetable or canola oil
2/3 cup Rice Road Sweet & Sour Sauce with Peanuts
Fresh cilantro or basil for garnish
black pepper - to taste

Directions

Heat oil in a skillet or wok over high heat.
Stir-fry pork cubes until partially cooked, seasoning with black pepper to taste.
Add vegetables and continue stir-frying until vegetables are tender and pork is cooked through.
Add sweet & sour sauce and continue cooking until sauce, pork, vegetables are thoroughly heated.

Directions

¾ pound seafood
1 red bell pepper - sliced
1 small onion - sliced
Celery - sliced diagonally
2 tablespoon vegetable or canola oil
½ cup almonds

Directions

Stir-fry seafood in 1 tablespoon of oil for 2 minutes; remove from pan.

¾ pound boneless chicken breast - thinly sliced
1 garlic clove - minced
2 cups snow peas
½ cup red bell pepper - sliced
1/3 cup green onion - sliced
2 tablespoons vegetable or canola oil
1/3 cup Rice Road Stir-Fry Sauce with Natural Squeezed Lemon

Directions

Stir-fry chicken and garlic in 2 tablespoons oil for 4 minutes.
Stir-fry peppers, onion, and celery in 1 tablespoon of oil for 2 minutes.
Return seafood to pan; add stir-fry sauce, almonds, and red pepper flakes.
Stir mixture and cook for 1 minute.

Teriyaki Burgers

Serves 4

Ingredients

1 pound ground beef (ground turkey or chicken may be substituted)
1/3 cup celery - finely chopped
¼ cup green onions - finely chopped
2-3 ounces Rice Road Teriyaki Stir-Fry Sauce

Directions

Mix ground beef, celery, green onions, and 2 tablespoons of teriyaki sauce.
Divide meat mixture into 4 patties and grill or pan fry.
Brush patties generously with remaining teriyaki sauce during cooking until brown and cooked to desired doneness (cooked through for turkey or chicken).
Place patties on toasted hamburger buns and garnish with lettuce, tomato, and onion, as desired.
