Stir-Fry Chicken & Vegetables
Serves 4
Ingredients
14 ounces (yield: 28 ounces) long grain
uncooked or precooked rice
1 pound boneless chicken cut into bite
size pieces
16 ounces oriental stir-fry vegetable mix
8 ounces
Rice Road Teriyaki or
Stir-Fry Sauce of your choice
1 ounce vegetable or canola oil
black pepper - to taste
Directions
Cook rice according to package directions.
Heat oil in skillet or wok.
Add chicken, season with pepper, and sauté until chicken is cooked through.
Add vegetables and sauce. Mix well and bring to boil for 3-4 minutes. Do not
overcook.
Reduce heat. Simmer for additional 1-2 minutes. Remove from heat and serve
over rice.
Options: Use beef or shrimp in place of chicken.
